1. Heat the avocado oil in a large skillet over medium heat. Add the bell peppers and onion and cook for 5–7 minutes, or until the veggies start to get tender.

2. Add the chicken thighs and cook for 5 minutes. Add the sausage and cook for 3 minutes.

3. Add the coconut milk and cook for 5 minutes, or until warmed. Serve over the zucchini noodles or stir the zucchini noodles into the sauce.

4. Store leftovers, covered, in the refrigerator for up to 6 days.
